Cheese may soon be making a comeback in a four-county area, including Hastings County. The idea is to focus on “artuian cheese-making,” cheese made from goat and sheep’s milk. Lennox and Addington spokesman Stephen Paul says sales in Ontario have hit the 300-million dollar mark, and are projected to go to 400-million. Paul says the four counties, Lennox and Addington, Hastings, Prince Edward and Frontenac want a piece of that extra 100-million. The four counties are helping investors in a bid to have more artisan cheese facilities open in the area.
