Council in Prince Edward County got a very enthusiastic update on the Food Hub at Sophiasburgh Central School.
Food Hub Chair Mike Farrell says they are well on their way to a soft launch in June.
He says they are working on leasing equipment such as a combi oven, gas grill, jet burners and dishwasher for use in the community kitchen.
The kitchen would be available to small and medium sized food processors, caterers, bakers and food truck operators.
Farrell says they have three spaces for longer term rentals, storage space and a teaching and training facility.
It has been over two years since the initiative was launched to save the school and create a food hub in the County.
Farrell says the school is up and running and they are chomping at the bit to run their business model.
He said he in particular is very focused on a food literacy program for the K-8 school.
Farrell told Quinte News that enrolment at Sophiasburgh has increased approximately 5% since the school got the reprieve 18 months ago when the Hastings and Prince Edward District School Board signed an agreement with the County and the Food Hub.
He says the Food Hub will be available for use for people and businesses outside of Prince Edward County.
Councillor Bill Roberts said it was nice to see old County roots and new County roots working together on this initiative.
